½ lb beef round
3 cloves garlic
1 soup bone
1 onion, quartered
6 cups water
1 sprig parsley
1 green bell pepper, chopped
1 tablespoon salt
3 tomatoes, chopped
Preparation:
Cut the beef into 2 inch cubes and put everything in a big casserole dish.
Let it stand for 30 minutes.
Bring the beef broth to a boil, turn the heat down, and let it simmer over a medium low heat for 2 hours, with a tight fitting lid on the pan.
Strain the broth and discard the solids.
