Provolone cheese is an Italian cheese. It is a bit like mozzarella but with a much fuller flavor. Provolone is very nice with French onion soup recipes and it is great with this Houlihans French onion soup. You can use Gruyere if you want but Provolone is more authentic if you want to copy the restaurant recipe for French onion soup.
Feel free to garnish this recipe for French onion soup with some chopped chives or fresh parsley. You do not get those with Houlihans French onion soup but they do add some color and finish off the soup nicely.
Ingredients -
6 cups onions, sliced thinly
4 cups beef broth
¼ cup butter
6 slices Provolone cheese
6 slices toasted French bread
2 teaspoons Worcestershire sauce
¼ cup dry white wine
1 teaspoon sugar
Salt and black pepper, to taste
Preparation:
Sauté the onions in the butter until they are tender, then add the wine, sugar, beef broth and Worcestershire sauce.
Add some salt and pepper.
Bring the soup to a boil then turn the heat down and cook over a moderate heat for about 20 minutes.
Preheat the oven to 350 degrees F.
Ladle the soup into ovenproof bowls and add a slice of toasted bread to each.
Put one slice of cheese over each piece of toast and bake for 10 minutes until the cheese is golden brown and bubbling.
