Julia Child was an American author, television personality, and chef. She introduced French cooking techniques and French cuisine to the United States through her television shows and cookbooks. French cuisine is known and highly thought of all over the world and many dishes can be traced back to French roots. French onion soup is one example of a world famous dish, which was created by French chefs.
The following recipe for Julia Child's French onion soup combines all the typical French onion soup ingredients with some white wine for added flavor and a Swiss cheese and Parmesan gratin topping. French onion soup cheese is normally Gruyere but the combination of Swiss cheese and Parmesan cheese also goes well with the other ingredients.
This is an easy recipe if you are new to making French onion soup and you probably already have most of the ingredients in your kitchen. Garnish this Julia Child's French onion soup with a sprinkling of chopped fresh parsley or a sprig of fresh parsley and you have a masterpiece of a dish, which is actually pretty simple to put together.
Ingredients -
¼ cup olive oil
2 tablespoons butter
2 cloves garlic, pressed
3 lbs onions, thinly sliced
2 cups dry white wine
1 teaspoon white sugar
6 cups beef broth
3 teaspoons grated Parmesan cheese
2 cups grated Swiss cheese
12 toasted French baguette slices
Salt and freshly ground black pepper
Preparation:
Melt the oil and butter in a big pan over a medium heat, and then add the sugar, garlic, and onions. Sauté until they are slightly colored for about 6 minutes. Add the white wine and bring the mixture to a boil. Turn the temperature back down to medium and cook for 5 minutes, then pour in the broth.
Turn the temperature up to medium high, and then back to low.
Let the onion soup simmer for 90 minutes, uncovered.
You can freeze the soup at this point if you like.
Preheat the broiler and ladle the onion soup between 6 ovenproof soup bowls. Put a couple of slices of toasted bread on each one, and then sprinkle the cheese over the top. Put the soup bowls on a shallow baking pan and broil until the cheese melts.
This will take about a minute.
