Ingredients -
2 ½ lbs Spanish onions, sliced
2 bay leaves
¼ lb unsalted butter
1 tablespoons salt
1 teaspoon black pepper
1 ½ cups red wine
1 cup sherry or ½ cup sherry and ½ cup whisky or cognac
8 cups beef broth
6 slices Swiss cheese
3 tablespoons grated Parmesan cheese
6 slices baguette bread
Preparation:
Sauté the onions and bay leaves in the butter over a medium high heat in a Dutch oven type pot for about half an hour, stirring now and then.
When the onions are golden brown, deglaze the pan with the sherry and simmer the mixture for 5 minutes.
Add the wine and let it simmer uncovered for 15 minutes.
Add the broth and season to taste.
Bring the onion soup to a boil, and then simmer it uncovered for 20 minutes.
Take out the bay leaves, add more salt, and pepper if necessary
.Ladle the soup into ramekins and put a slice of bread on top of each one.
Put a slice of cheese on top and sprinkle some Parmesan over that.
Broil until the cheese is browned and melted.
