Wolfgang Puck Onion Soup with Port

This Wolfgang Puck onion soup recipe combines the flavors of chicken bouillon, almond oil, port and more for an aromatic and light soup, which is full of flavor. The standard French onion soup cheese, Gruyere, is used along with French bread croutons to garnish this delicious onion soup recipe.

If you do not have almond oil you can use safflower oil or another kind of mild flavored oil. You can either buy bouquet garni pouches or make your own by putting thyme, a bay leaf, and some celery in a muslin bag. Bouquet garni is often used in soup recipes like French onion soup to add a gentle herby flavor.

Original Recipe for Wolfgang Puck Onion Soup

Ingredients -

4 onions
8 cups chicken bouillon
˝ cup port
3 tablespoons almond oil or safflower oil
1 bouquet garni
3 cups grated Gruyere cheese
12 sliced French bread, toasted
Salt and black pepper, to taste

Preparation:

Slice the onions thinly.

Add the oil to a 6 quart stockpot and heat it. Add the onions and sauté them over a medium low heat for about 25 minutes or until they are golden brown.

Use the port to deglaze the pan.

Add the bouillon, bouquet garni and some salt and pepper and simmer the mixture for about 35 minutes.

Preheat the broiler.

Pour the French onion soup into 6 ovenproof bowls and top each one with a couple of slices of bread. Scatter the Gruyere over the bread and brown under the broiler until the cheese is bubbly and starting to brown.
