Broccoli and French Onion Soup Recipe

Combining soup, bread, broccoli, and cheese is a great way to make a meal in a hurry. The following French onion soup recipe blends canned French onion soup with the other ingredients to make a filling and tasty meal for the family.

The broccoli adds nutritional value as well as color and flavor in this easy French onion soup recipe and the cheese topped French bread slices makes this recipe more authentic. If you are not a fan of broccoli, you might like to substitute cauliflower, zucchini, or another green vegetable like spinach. The parsley on top adds a nice looking garnish with some more color and an herby flavor, which goes well with the other ingredients.

If you make the croutons while the soup cooks, you can make this meal from scratch in about ten minutes. Classic French onion soup recipes can take several hours to cook because of the slow onion caramelization process but this French onion soup recipe is fine if you just want something hot and tasty after a long, hard day and if you have some vegetables to use up.

10 Minute French Onion Soup Recipe

Ingredients -

4 thick slices French bread
2 cans condensed French onion soup, 10 ½ oz each
6 oz shredded fontina cheese
¼ cup chopped parsley
10 oz package frozen chopped broccoli

Preparation:

Combine the condensed soup with as much water as it tells you to on the label, in a 4 quart pan.

Add the broccoli.

Bring the mixture to a boil over a high heat.

Turn the heat to low and simmer for about 8 minutes or until the broccoli is, hot and tender.

Put the bread slices in a pan and broil them until they are golden brown.

Spoon the broccoli and onion soup into 4 soup bowls and put a toasted bread slice on top of each one.

Add the fontina cheese.

Put the soup bowls in the pan, broil until the cheese is golden brown, and melted. Sprinkle the chopped parsley over the top of the soup and serve.
