Traditional English Cream of Onion Soup Recipe

You can buy canned cream of onion soup but nothing compares to the wonderful flavor of homemade French onion soup or homemade cream of onion soup. The following recipe is a very easy onion soup and there are not many ingredients you have to get for it.

If you like creamy soups, you will love the simplicity of this delicious onion soup recipe with its fresh flavors and creaminess. You might like to add a little English mustard to the recipe or serve some grated cheese on top or you can just serve it as it is. This Old English cream of onion soup is very different to the French way of making onion soup but it is just as flavorful and just as rich tasting.

Like with French onion soup cheese is a nice topping for creamy soups too but you will not need much. Be careful with English mustard if you are using it - it is fiery stuff and a little goes a long way!

Easy Cream of Onion Soup

Ingredients -

1 lb onions, thinly sliced
3 tablespoons light cream
4 teaspoons corn flour
½ pint plus 3 tablespoons water
1 pint milk
2 tablespoons butter
Salt and freshly ground black pepper
4 sprigs of parsley, to garnish

Preparation:

Heat the butter in a pan and add the sliced onions. Cover the pan and cook them gently, shaking the pan every few minutes to stop them sticking.

Add the milk, water, salt, and pepper and bring the onion soup to a boil, stirring it all the time. Turn the heat down and let it simmer for 25 minutes or until the onion is soft.

Blend the corn flour with 3 tablespoons of water and stir the mixture into the onion soup, then bring it to a boil.

Cook it, stirring all the time, for a few minutes until it thickens a bit.

Add the cream and adjust the seasoning.

Reheat the soup without boiling it; divide it between 4 serving bowls and garnish with the parsley.
