Ingredients -
6 bunches scallions
4 tablespoons butter
⅓ cup heavy cream
2 cups mushrooms, sliced
5 cups vegetable broth
Salt and freshly ground black pepper, to taste
Preparation:
Melt the butter in a soup pot and add the onions and some salt and pepper.
Sauté them for 3 or 4 minutes, then add the broth and bring the onion soup mixture to a boil.
Turn the heat down, cover the pan, and let the soup simmer for 10 minutes.
Add half the mushrooms and puree the soup in a blender or food processor until it is smooth.
Put it back in the pot with the cream and the rest of the mushrooms and cook it gently until the mushrooms are tender.
Serve hot.
