Ingredients -
2 big yellow onions, sliced thinly
3 tablespoons butter
1 garlic clove, finely chopped
2 tablespoons slivered or flaked almonds, toasted
3 cups vegetable or chicken broth
3 tablespoons dry sherry
½ teaspoon paprika
2 oz blanched almonds, toasted then finely ground
Pinch of saffron threads
1 tablespoon chopped fresh parsley
Preparation:
Melt the butter in a heavy bottomed pot over a low heat. Add the garlic and onions and stir them to ensure they are evenly coated in butter. Cover the pan and cook the garlic and onions gently, stirring often, for about 30 minutes or until they are soft.
Add the saffron threads to the pan and cook uncovered for 4 minutes.
Add the finely ground almonds and cook for another few minutes, stirring all the time.
Pour in the broth and sherry and stir in the paprika and a teaspoon of salt.
Season with black pepper and bring the onion soup to a boil. Turn the heat down and simmer it for 10 minutes. Process the soup in a food processor until smooth, then put it back into the rinsed pot and reheat it slowly without allowing it to boil.
Season the soup again if necessary, then ladle it into heated bowls, and garnish it with the almonds and some parsley.
