Swanson is a great brand and Swanson chicken broth is nearly as good as homemade chicken broth. It is great to use in onion soup recipes. Beef broth is typically used to make French onion soup but, for a lighter flavor, chicken broth is very good with the taste of the onions. In the following onion soup recipe, the ingredients are deliberately kept very simple to allow the flavors of the chicken broth and the onions to really shine through.
This is a creamy soup, what makes it really stand out is the fact that the onions cook slowly for three hours, and then the soup cooks slowly for another hour. This gives the most tender and sweet onions and the most delicious soup, with perfectly blended flavors. Apart from a little salt and white pepper, this delicious onion soup with Swanson chicken broth does not need any other seasonings because it has so much flavor of its own. This soup makes a delicious lunch or supper.
To make it go further, puree the onions and add some lump crabmeat and canned tuna near the end, to make an easy fish stew, which is great served with bread for mopping up the wonderful juices. If you have some left over, it keeps for two days in the refrigerator and then you just need to warm it up gently on the stove.
Ingredients -
½ cup water
5 onions
4 cups milk
1 cup Swanson chicken broth
2 tablespoons all purpose flour
5 tablespoons melted butter
Salt and white pepper, to taste
Preparation:
Preheat the oven to 375 degrees F.
Cut the onions into ⅛ inch slices, then 1 inch long pieces.
Put them in a 3 quart casserole and pour the butter over them.
Stir well, then cover the casserole and bake for 3 hours.
Add the Swanson chicken broth, stir, and bake, covered, for another hour.
Stir the flour into the water until it is thick.
Bring the milk to a near boil, and then stir in the flour and water mixture.
Take the casserole out of the oven and stir in the milk.
Season to taste with salt and pepper and serve immediately.

If you want to convert some of your onion soup into a stew, you can add some solid ingredients at the end of the cooking time to thicken it up and make it into a stew. For example, add some lump crabmeat and a drained can of tuna for a fish stew. Add some cooked chicken pieces and corn kernels for a chicken stew. This one is especially good if you have used Swanson chicken broth to make the French onion soup. You will either need to drain some of the onion soup liquid or use flour to thicken it up. Serve the stew in shallow bowls with bread on the side.
Using chicken broth, such as Swanson chicken broth, in a French onion soup recipe gives it a very different flavor from when you use the more traditional beef broth. A good quality broth, like Swanson chicken broth, is the next best thing if you cannot make your own chicken broth. Using an inferior quality broth will ruin the flavor of your French onion soup recipe and it is never worth saving a few cents on cheap broth, because your onion soup will be under par because of it.
