Ingredients -
8 Vidalia onions
1 ½ cans water
2 cans Swansons concentrated beef broth, 10 ¾ oz each
½ teaspoon salt
4 tablespoons butter
½ loaf French bread, in 2 inch thick rounds
1 teaspoon Worcestershire sauce
Grated mozzarella
Preparation:
Cut the onions into ½ inch slices, and then halve them.
Sauté the onions in a 4 quart stockpot in the butter. Let them cook very slowly over a medium low heat until they are deep brown and caramelized. This will take about half an hour.
Add the water, broth, Worcestershire sauce, and salt and simmer the soup until it is hot.
Preheat the broiler.
Divide the slices of French bread between the ramekins or bowls and ladle the soup over the bread until it is covered and near the top of the bowls.
Cover the bowls with the cheese, broil until the cheese is golden brown, and melted.

Swansons beef broth is a great base for French onion soup because it has such a delectable flavor. You can even try the chicken or vegetable broth for a different tasting onion soup recipe.
Any meaty, rich broth is excellent in French onion soup because you need something full flavored enough to suit the strong, sweet onion taste.
