How to Make Vegetarian French Onion Soup Recipe

French onion soup is traditionally made with a rich and meaty beef broth but what if you are vegetarian? Surely, vegetarians should be able to enjoy an onion based dish too, considering onions are the main ingredient, and they are also a vegetable.

In order to make a veggie onion soup recipe, you will need to use vegetable broth instead of beef broth. The other ingredients remain the same. The following recipe is a great one for vegetarians who would enjoy a rich and tasty onion soup recipe without having to use beef or beef byproducts.

You can choose between using vegetable broth and using water. The thyme, mustard, and soy sauce add plenty of flavor and, even if you use plain water, this recipe will be very tasty thanks to the juicy white onions and the seasonings you use. You can use a stronger onion if you want to. Sweet onions, like Vidalia onions, also work well with this recipe or you can use piquant red onions or even full flavored yellow onions (which are also known as Spanish onions) for a stronger onion flavor.

Tasty Vegetarian French Onion Soup Recipe

Ingredients -

4 white onions, sliced thinly
1 teaspoon salt
3 tablespoons butter
5 cups vegetable broth and/or water
½ teaspoon dry mustard
¼ teaspoon dried thyme
2 tablespoons dry white wine
2 tablespoons soy sauce
4 slices French bread, toasted
Big handful grated Gruyere cheese
White pepper, to taste

Preparation:

Melt the butter in a pan over a medium heat, then add the onions and salt and cook them for 10 minutes, stirring now and then.

Add the thyme and mustard and mix well.

Cover the pot and simmer the mixture over a low heat for half an hour.

Add the broth or water, the wine, soy sauce and pepper and simmer for 10 minutes more.

Ladle the soup into 4 soup bowls and top with the French bread and cheese.

Broil for a couple of minutes, until the cheese melts.
